Peanut Butter-Chocolate Chip Cookies (Adapted from Taste for Life)
4 tablespoons unsalted butter, softened
3/4 cup creamy peanut butter
1 large egg
1 teaspoon vanilla
1/2 cup packed dark brown sugar
1/4 cup brown rice flour
1/8 teaspoon salt
1/4 teaspoon baking powder
1/2 cup dark chocolate chunks
Preheat oven to 350
In a large bowl, use a wooden spoon to cream the butter smooth. Mix in peanut butter until combined, then stir in the egg. Mix in vanilla and brown sugar. Add flour, salt and baking powder - stir to combined. Stir in chocolate.
Scoop the dough using with a tablespoon cookie scoop onto parchment lined baking sheets - slightly flatten the dough balls with your fingers. Bake until the cookies are golden brown and just set in the center - about 12 to 15 minutes. Remove and let sit on the baking sheets for 5 minutes before transferring the cookies to a wire rack to finish cooling.
Makes about 20 cookies.
