Peanut Butter Granola

Peanut Butter Granola (Adapted from Canadian Living)

1/2 cup apple cider
1/3 cup natural peanut butter
1/3 cup honey
1 teaspoon cinnamon
1 teaspoon vanilla
1/4 teaspoon salt
4 cups old-fashioned rolled oats
1/3 cup sliced almonds
1/2 cup dried cranberries
1/3 cup chopped dates

Preheat oven to 350

In a large saucepan, add cider, peanut butter, honey, cinnamon, vanilla and salt. Heat over medium until the peanut butter has melted, stirring often. Remove from the heat and mix in oats and almonds.

Spread the mixture on a large baking sheet lightly coated with nonstick spray. Bake, stirring occasionally, until light golden - about 15 minutes.

Stir in cranberries and dates - continue baking until golden and fragrant, about 15 minutes more. Remove and place the baking pan on a wire rack to cool completely.

    thanks for ur down to earth granola previously. it was so good! i made too much and gave some away and had to make it again recently due to popular demands!! thank you so so much!

    but, i kinda like my granola in clusters. how do i achieve that?

  4. Elaine - This recipe just isn't prone to getting decent clumps to form. Usually you'll need a high sugar/oil content for the granola to stick together.
