Peanut Energy Bars

Peanut Energy Bars (Adapted from Eating Well)

1/2 cup roasted salted peanuts
1/2 cup roasted sunflower seeds
1/2 cup dark raisins
1/2 cup dried blueberries
1/2 cup dried cranberries
1/2 cup golden raisins
2 cups old-fashioned rolled oats
2 cups crisped brown rice cereal
1/2 cup natural peanut butter
1/2 cup packed brown sugar
1/4 cup brown rice syrup (can use light corn syrup)
1/4 cup Lyle's Golden Syrup (can use honey or light corn syrup)
1 teaspoon vanilla

In a large bowl, toss together peanuts, sunflower seeds, cranberries, dark raisins, blueberries, golden raisins, oats and rice cereal.

In a medium microwave-safe bowl, stir together peanut butter, brown sugar, brown rice syrup and Golden Syrup. Microwave until the mixture is bubbling, about 1 to 2 minutes. Remove and stir in vanilla. Pour over the dry ingredients and stir together until well-coated.

Scoop the mixture into a 9" x 13" baking pan coated with cooking spray. Coat hands with cooking spray - evenly and firmly press the mixture down. Set aside and let rest for 1 hour before cutting into bars.

Makes about 16 bars.

  2. I need to find some of that golden syrup. I've looks a few places unsuccessfully. Haven't checked our health foods store.

    Katrina - I know it can be hard to find sometimes... you could always ask at your local market to carry it though!
