Peanutty Baked Chicken Breasts

Peanutty Baked Chicken Breasts (Adapted from CL)

2 tablespoons honey
2 tablespoons Dijon mustard
salt and fresh ground black pepper
1/3 cup peanuts
1 cup panko breadcrumbs
4 4-ounce boneless and skinless chicken breasts, pounded to about 1/2" thick

Preheat oven to 500 degrees.

In a small bowl, stir together honey and mustard.

In a food processor, add peanuts and pulse until finely chopped. In a shallow dish, stir together chopped peanuts and panko.

Season chicken lightly with salt and fresh ground black pepper. Brush each portion of chicken with the honey mustard. Dredge each through the panko mixture. Place coated chicken onto a baking sheet coated with olive oil spray. Lightly coat the top of each chicken breast with olive oil spray.

Place into the oven and bake until done, about 5 to 8 minutes.

Makes 4 pieces.
