Pine Nut and Lemon Orzo (Adapted from CL)
4 cups dry orzo pasta
3/4 cup fresh lemon juice
2 tablespoons grated lemon zest
1 teaspoon salt
3/4 teaspoon freshly ground black pepper
3 tablespoons extra-virgin olive oil
3/4 cup chopped fresh parsley
1/2 cup pine nuts, toasted
In a large pot of boiling salted water, cook pasta according to package directions - drain well.
In a large bowl, whisk together juice, zest, salt and pepper. Slowly drizzle in the oil, whisking constantly, until completely combined. Toss in cooked pasta and mix to coat. Let cool to room temperature. Stir in parsley and pine nuts right before serving.
Makes about 8 main or 12 side servings.
