Sesame-Crusted Beef Tenderloin Steaks with Pineapple, Mango, and Red Pepper Relish (Adapted from CL)
For the relish
1/2 cup finely chopped pineapple
1/2 cup finely chopped peeled mango
1/4 cup finely chopped red bell pepper
2 tablespoons chopped fresh cilantro
1 tablespoon fresh squeezed orange juice
1/2 teaspoon grated orange zest
1/2 teaspoon crushed red pepper
For the steaks
1 teaspoon olive oil
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
4 1" thick beef tenderloin steaks
1 tablespoon plus 1 teaspoon black sesame seeds
To make the relish
In a medium bowl, toss together pineapple, mango, bell pepper, cilantro, juice, zest and crushed red pepper.
Add oil to a grill pan and heat over medium. Season steaks with salt and pepper - evenly coat both sides of the steaks with the black sesame seeds. Add steaks to the hot pan and cook until they are done to your liking - we went medium-rare and that was about 3 minutes per side.
Serve each steak with an even portion of the relish.
Makes 4 servings.
