Spicy Roasted Potato Wedges (Adapted from CL)
2 pounds potatoes (I used a variety of red, fingerling and purple), cut into wedges
1 tablespoon olive oil
1 teaspoon dried oregano
3/4 teaspoon salt
1/2 teaspoon paprika
1/8 teaspoon crushed red pepper
3 tablespoons fresh grated Parmesan cheese
Preheat oven to 450
In a large bowl, add potato wedges - drizzle with oil and toss to coat. Season the wedges with oregano, salt, paprika and crushed red pepper.
Place the potatoes in a single layer on a baking sheet coated with cooking spray. Bake until the potatoes are golden, about 30 to 35 minutes. Scatter the potatoes with Parmesan cheese and continue to bake until the cheese melts, about 2 minutes.
Makes about 4 to 6 servings
