Spinach and Cheese Bites

Spinach and Cheese Bites

16 ounces cottage cheese
2 large eggs
4 egg whites
1/4 cup chopped green onions
2 ounces shredded sharp cheddar
3 tablespoons butter, melted
1 tablespoon flour
1/2 teaspoon salt
1/2 teaspoon granulated garlic
1/4 teaspoon fresh ground pepper
1/8 teaspoon red pepper flakes
20 ounces frozen spinach, thawed and squeezed dry
1 ounce fresh grated Parmesan cheese

Preheat oven to 350

In a large bowl, whisk together cottage cheese, eggs, egg whites and green onions until well combined. Mix in cheddar, butter, flour, salt, garlic, and peppers until thoroughly mixed. Fold in the spinach.

Scoop mixture into a 9" square baking dish coated with nonstick spray. Sprinkle the top with the fresh Parmesan.

Bake until set and the top is golden, about 45-55 minutes. Remove and let cool to room temperature to cut clean squares.
