Spinach-Apple Salad with Maple-Bacon VinaigretteSpinach-Apple Salad with Maple-Bacon Vinaigrette (Adapted from CL)

1 tablespoon pure maple syrup
1 teaspoon red wine vinegar
1/4 teaspoon Dijon mustard
1 tablespoon extravirgin olive oil
1 tablespoon chopped fresh chives
1/4 teaspoon salt
1/4 teaspoon fresh ground black pepper
2 bacon slices, cooked and crumbled
1 large Granny Smith apple, cut into julienne strips
1/4 cup thinly vertically sliced red onion
6 ounces baby spinach

In a small bowl, whisk together maple syrup, vinegar and mustard. Drizzle in oil, whisking constantly, until completely combined. Whisk in chives, salt, pepper and bacon.

In a large bowl, add apple strips, onion and spinach. Drizzle with vinaigrette and toss well to coat.

Makes about 4 servings.
