Spinach-Cheese Bake

Spinach-Cheese Bake (Adapted from CL)

2 tablespoons butter, melted
12 ounces fresh baby spinach
5 ounces shredded sharp white cheddar cheese
3 ounces shredded Monterey Jack cheese
1 1/3 cups all-purpose flour
1 1/2 cups milk
2 large eggs
4 egg whites
1 tablespoon Dijon mustard
1 teaspoon salt
1 teaspoon baking powder
1/2 teaspoon garlic powder
1/2 teaspoon fresh ground black pepper
1/8 teaspoon ground nutmeg
1/8 teaspoon cayenne pepper

Preheat oven to 350

Pour melted butter into a 9" x 13" baking dish lightly coated with nonstick spray - tilt the dish to coat. Arrange the spinach evenly over the bottom - it will be quite full. Evenly scatter the top with the shredded cheeses.

Place flour in a medium bowl.

In another medium bowl, whisk together milk, eggs, egg whites, mustard, salt, baking powder, garlic, pepper, nutmeg and cayenne pepper. Pour milk mixture into the flour and whisk to combine. Pour over the cheese and spinach mixture. Bake until set and lightly browned on top - about 40 minutes. Remove and let cool for about 10 minutes before cutting.

Makes about 6 servings.
