Strawberry-Buttermilk Gelato

Strawberry-Buttermilk Gelato (Adapted from CL)

2 cups granulated sugar
2 cups water
5 cups quartered hulled strawberries
2 cups buttermilk

In a large saucepan, add sugar and water. Bring to a boil, stirring until sugar dissolves. Remove from the heat and pour into a large bowl - set aside to cool completely.

In a food processor, add strawberries and process until smooth. Pour strawberry purée and buttermilk into the cooled sugar syrup, stirring to combine. Either use immediately or cover and place in the refrigerator for up to 24 hours.

To prepare the gelato, pour the mixture into an ice-cream maker and process according to the manufacturer's instructions. Scoop into a freezer-safe container and let rest in the freezer until it has If it looks like it may over-fill your ice-cream maker (try not to fill it more than three-fourths full), just cover the rest of the mixture and process when the can of the ice-cream maker has had a chance to re-freeze.

Makes about 8 cups.

  1. Can you do this without an ice cream maker? I was thinking of picking strawberries this week, but don't have one!

  2. Kristilyn - It might be possible, though I've never done it. The end texture might be different, but I've heard that you can just put the bowl into the freezer and stir it every 15 minutes or so until it sets up.
