Triple-Berry French Toast

Triple-Berry French Toast (Adapted from CL)

2 cups frozen blueberries
1 1/2 cups frozen blackberries
1 1/2 cups frozen raspberries
2/3 cup granulated sugar
1 tablespoon cornstarch
1 teaspoon ground cinnamon
2 large eggs
2 large egg whites
1 cup milk
1 teaspoon vanilla
8 ounces day-old French bread, cut into cubes
1 tablespoon granulated sugar
1 tablespoon confectioners' sugar

Preheat oven to 350

Lightly coat a 9" x 13" baking dish with cooking spray. Add blueberries, blackberries, raspberries, 2/3 cup granulated sugar, cornstarch and cinnamon into the dish - toss well to combine.

In a large and shallow dish, beat together eggs and egg whites. Whisk in milk and vanilla. Add bread, turning to coat. Set aside and let sit for about 5 minutes, turning the cubes occasionally. Scatter the bread over the berries in a single layer. Sprinkle the top with the 1 tablespoon granulated sugar.

Bake until golden brown and the juices are bubbly, about 30 minutes. Remove and let sit for a couple minutes before serving. Sift confectioners' sugar on top right before serving.

Makes about 4 to 6 servings.

  1. This looked amazing...so while at the market I saw there was day old french bread and frozen mixed berries on sale--the recipe was calling to me!

  3. Wow, this sounds perfect and looks even better - not that soupy mess of a recipe that most others are. The ones that I have subjected my starving, gracious family to on more than one occassion.

    Just wondering, would I be able to substitute strawberries in lieu of the blueberries? Would they provide enough flavor? So excited to make this for XMas morning :)
