Turkey Mini Meat Loaves

Turkey Mini Meat Loaves (Adapted from CL)

2 teaspoons olive oil
1 cup chopped onion
3 garlic cloves, minced
6 tablespoons dry breadcrumbs
2 tablespoons chopped fresh parsley
2 teaspoon Worcestershire sauce
1/2 teaspoon salt
1/2 teaspoon dried oregano
1/4 teaspoon freshly ground black pepper
16 ounces ground turkey
1 large egg
6 tablespoons ketchup, divided
2 teaspoons grainy mustard
1/2 teaspoon cayenne pepper sauce

Preheat oven to 350

In a medium skillet, heat oil over medium-high. Add onions to the pan and cook until very lightly browned - about 5 minutes. Add garlic and cook until fragrant, about 1 minute. Remove from the heat and allow to cool slightly.

In a large bowl, gently mix together the cooled onion mixture, breadcrumbs, parsley, Worcestershire, salt, oregano, pepper, turkey and egg. Stir in 4 tablespoons ketchup.

Evenly divide mixture between 6 muffin cups lightly coated with nonstick spray - if you are using a 12 cup muffin tin, pour a little bit of water in each empty well so it does not scorch. Set the pan on a baking sheet to catch any drippings. In a small bowl, whisk together the remaining 2 tablespoons ketchup, mustard and cayenne pepper sauce. Evenly brush mixture over the top of each mini meat loaf.

Bake for about 30 minutes or until an instant-read thermometer registers around 165 degrees.

Makes 6 mini loaves.
