Turkey Wraps with Chipotle Mayonnaise (Adapted from Bon Appétit)
1/2 cup mayonnaise
3 tablespoons chopped fresh cilantro
1 scallion, minced
1 tablespoon minced canned chipotle chilies in adobo
1 teaspoon fresh lime juice
salt
2 10" flour tortillas
8 ounces thinly sliced smoked turkey
shredded romaine lettuce
In a small bowl, stir together mayonnaise, cilantro, scallion, chipotle chilies and lime juice - season with salt.
Divide mayo between the tortillas and use an off-set spatula to spread over the top of each. Arrange the turkey and enough lettuce to cover over the top. Tightly roll up the tortillas and slice each in half to serve.
Makes 2 servings.
