Vanilla-Peanut Butter Treats

2 1/2 cups whole wheat flour, divided (may need extra)
1/2 cup all-purpose flour
1/2 cup cornmeal
1/2 cup old-fashioned rolled oats
1/2 cup rye flour
1 1/2 cups water
1/3 cup canola oil
6 tablespoons creamy peanut butter
2 teaspoons vanilla

Preheat oven to 400

In a large bowl, whisk together 2 cups whole wheat flour, all-purpose flour, cornmeal, oats and rye flour.

In a medium bowl, whisk together water, oil, peanut butter and vanilla. Pour mixture into the dry ingredients and stir to combine. Scoop the mixture out onto a floured surface and knead until smooth, adding the reserved 1/2 cup whole wheat flour. If the mixture is too sticky, keep adding flour - if it is too dry, add just a little water.

Roll the dough about 1/4" thick and cut out as many shapes as possible - re-roll the scraps and continue to cut out until the dough has been used up. Place on parchment lined baking sheets and bake until golden and firm to the touch, about 20 to 25 minutes. Remove and transfer the treats to a wire rack to cool completely.

Makes several dozen depending on the size of your cutter.

  1. I think I'm going to have to try these. I've made my guys the apple-cinnamon ones, and one of the dogs gets so excited when it's doggie snacker time that he "calls" his treats. :)
