Walnut-Strawberry Quick Bread

Walnut-Strawberry Quick Bread (Adapted from KAF Baker's Companion)

3/4 cup all-purpose flour
3/4 cup whole wheat pastry flour
1 cup granulated sugar
1/2 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon fresh grated nutmeg
1/2 cup chopped walnuts, toasted
1 1/4 cups mashed strawberries
1/2 cup canola oil
2 eggs
1 tablespoon lemon zest

Preheat your oven to 350

In a medium bowl, whisk together the flours, sugar, baking soda, salt, nutmeg and walnuts.

In another medium bowl, whisk together strawberries, canola oil, eggs and lemon zest. Pour the wet ingredients into the dry and stir just until combined.

Scoop the mixture into a 9" x 5" loaf pan coated with nonstick spray. Bake until a toothpick placed in the center comes out mostly clean - about 50 to 60 minutes. Remove pan from the oven and place on a wire rack for 10 minutes. Turn the loaf out onto the rack and let cool completely before slicing.
