Warm Spinach Salad with Apples, Bacon, and Cranberries

Warm Spinach Salad with Apples, Bacon, and Cranberries (Adapted from CL)

1 cup sliced firm tart apple
3/4 cup thinly sliced red onion
1/2 cup dried cranberries
10 ounces fresh baby spinach
1/3 cup balsamic vinegar
1 tablespoon sugar
2 tablespoons cranberry juice
1 teaspoon Dijon mustard
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
2 tablespoons sour cream
4 center-cut bacon slices, cooked and crumbled

In a large bowl, toss together apples, onions, cranberries and spinach.

In a small saucepan, whisk together vinegar, sugar, juice, mustard, salt and pepper. Bring mixture to a boil and cook for 1 minute. Remove from heat and whisk in sour cream.

Pour dressing over the salad mixture and gently toss to coat. Sprinkle with crumbled bacon.

Makes 4 servings.
