Watermelon-Feta Salad with Fresh Herbs

Watermelon-Feta Salad with Fresh Herbs (Adapted from CL)

6 cups cubed seedless watermelon
2 cups chopped trimmed watercress
3 ounces crumbled feta cheese
1/2 cup thinly sliced red onion
1/4 cup thinly sliced fresh basil
3 tablespoons thinly sliced fresh mint
3 tablespoons fresh lemon juice
1/4 teaspoon salt

In a large bowl, gently toss together watermelon, watercress, feta, onion, basil, mint, lemon juice and salt.

Makes about 4-6 servings.

  4. I can't believe you know this recipe! I am Greek and we make this salad at home very often in August. What's different about our family recipe is that we use wild oregano ( very fragrant )instead of watercress and we don't have to add any salt because good feta cheese is very salty. Also, we cut the whole watermelon in half and remove the fruit's flesh very carefully with a spoon or a knife , so that we can use the hollow watermelon halves as salad bowls. Sometimes, we even top the salad off with a few drops of ouzo.
