Whole-Grain Waffles with Cherry Sauce

Whole-Grain Waffles with Cherry Sauce (Adapted from Eating Well)

For the cherry sauce

2 cups frozen pitted cherries
1/4 cup honey
1/4 cup water
2 teaspoons cornstarch
1 teaspoon fresh lemon juice
pinch salt
1 teaspoon vanilla

For the waffle batter

2 cups white whole-wheat flour
1/2 cup fine cornmeal
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
2 large eggs
1/4 cup packed brown sugar
2 cups buttermilk
1 tablespoon canola oil
2 teaspoons vanilla

To prepare the sauce

In a small saucepan, add cherries, honey, water, cornstarch, lemon juice and salt. Bring mixture to a boil over medium heat, stirring, until the mixture thickens, about 1 minute. Remove from the heat and stir in vanilla.

To prepare the waffle batter

Preheat oven to 200 degrees.

In a medium bowl, whisk together flour, cornmeal, baking powder, baking soda and salt.

In another medium bowl, whisk together eggs and brown sugar until smooth. Whisk in buttermilk, oil and vanilla. Pour into the dry ingredients and stir just until combined. Set aside while you heat a waffle iron.

Pour enough batter into the waffle iron to cover about two-thirds of the surface (we used about 2/3 cup worth), gently spreading the batter to the edges. Cook until steaming stops and waffle is golden brown, about 4 to 6 minutes. Repeat with remaining batter, placing cooked waffles into the oven to keep warm until serving.

Rewarm cherry sauce over medium heat and serve with waffles.

Makes about 4 to 6 servings.

  1. Hello Joe...I just had to take the time to comment. I discovered you today during an image search and somehow ended up in one of your recipes in 2005. Wow...you're a real veteran. I gave a very quick look around...I'll certainly have to come back. There's so much to be appreciated. You appear to be extremely dedicated.
    About this recipe...I still have not purchased a waffle machine...hopefully one day. However, I can really see myself pouring your amazing cherry sauce on my crepes ;o) Cherry season is soon upon us here in Montreal...can't wait.

  3. This is a great waffle recipe. I loved the hint of texture the cornmeal gave it. I will use this over my white flour, beaten egg white recipe. Thanks for sharing the recipe!!
