Whole Wheat Spaghetti Pizza

Whole Wheat Spaghetti Pizza

6 ounces dry whole wheat spaghetti
1/2 cup milk
1 large egg
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1/4 teaspoon crushed red pepper
1/4 teaspoon salt
2 cups cooked, shredded chicken breast
2 cups of your favorite marinara sauce
4 ounces shredded mozzarella
2 ounces pepperoni
2 garlic cloves, thinly sliced
1 teaspoon olive oil

Preheat oven to 375

Break the pieces of pasta in half or thirds. In a large pot of boiling salted water, add pasta and cook according to package directions - drain well.

In large bowl, whisk together milk, egg, basil, oregano, crushed red pepper and salt. Add cooked spaghetti and toss well to coat. Pour the mixture into a 12" pizza pan lightly coated with nonstick spray (not one with holes!). Scatter the top with the cooked chicken. Spoon the sauce over the top and gently spread to cover. Sprinkle the top with the shredded cheese and then arrange the pepperoni on top.

In a small bowl, mix together the thinly sliced garlic and olive oil - scatter the top of the pizza with the garlic.

Bake until the outside crust is firm and the cheese is golden and bubbly, about 28 to 35 minutes.
Makes about 4 to 6 servings.
