Small ingredient list... big flavors...

Sometimes recipes with few ingredients turn out to be much more flavorful than one would think. Tonight's dinner was a good example!

Chicken, Charred Tomato and Broccoli Salad is simply just cooked chicken breast, fresh from the garden tomatoes and crisp tender broccoli which is then coated in a quick dressing made in the same pan in which you charred the tomatoes. The invigorating dressing is a quick mixture of freshly squeezed lemon juice, olive oil and seasonings. If you want to speed up the time to make this, you could easily use already cooked chicken breast from the market (roasted or otherwise.) I can easily see us making this dish to take on a picnic or an outdoor event.
