Fig, Prosciutto, and Blue Cheese Pizza

Fig, Prosciutto, and Blue Cheese Pizza

about 1 pound prepared whole-wheat pizza dough (I used my favorite recipe)
1 tablespoon olive oil
4 ounces crumbled blue cheese
2 ounces shredded fontina cheese
1/2 cup chopped dried black mission figs
fresh ground black pepper
4 ounces thinly sliced prosciutto

Preheat oven to 450 - place a baking stone on the if you have one.

On a lightly floured surface, roll and stretch dough until it is a rough 12" to 13" circle - transfer to a pizza peel or pizza pan if you are not using a pizza stone. Drizzle with olive oil and use your hands to rub it over the dough. Evenly scatter the dough with the blue cheese crumbles, fontina and chopped figs. Season with fresh ground black pepper.

Place in the oven and bake until the pizza is crisp and golden, about 12 to 18 minutes. Remove and immediately drape the prosciutto over the top. Let stand for 5 minutes and then cut into wedges.

Makes about 6 servings.
