Bulgur Salad With Grapes and Feta Cheese

Bulgur Salad With Grapes and Feta Cheese (Adapted from Everyday Food)

1/2 cup dry bulgur
1/2 teaspoon salt
3/4 cup boiling water
2 tablespoons fresh lemon juice
1 tablespoon olive oil
salt and fresh ground black pepper
2 tablespoons minced scallions
3/4 cup halved seedless grapes
1/2 cup chopped walnuts, toasted
2 ounces crumbled feta cheese

In a medium bowl, add bulgur, 1/2 teaspoon salt and boiling water - cover and let sit until the bulgur is tender, about 30 minutes.

In a large bowl, whisk together lemon juice and oil - season with salt and pepper. Add softened bulgur, scallions, grapes, walnuts and feta - toss gently to coat.

Makes 2 servings.
