Coconut-Pineapple Loaf Cake

Coconut-Pineapple Loaf Cake (Adapted from Everyday Food)

1 1/2 cups sweetened shredded coconut
1 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
8 tablespoons unsalted butter, softened
1 cup sugar
3 large eggs
1 teaspoon vanilla
1 cup sour cream
20 ounce can pineapple chunks in juice, drained well

Preheat oven to 350

Scatter coconut on a large baking sheet - bake, stirring often, until lightly toasted, about 6 to 10 minutes. Remove from the oven and set aside.

In a medium bowl, whisk together flour, baking soda and salt.

In a large mixing bowl, cream together butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each. Beat in vanilla. Mix in dry ingredients alternately with sour cream, beginning and ending with flour mixture, mixing just until combined. Add pineapple and 1 cup coconut - fold just until mixed.

Scoop the mixture into a 9" x 5" loaf pan coated with nonstick spray - smooth top and scatter the remaining coconut on top. Bake until a toothpick placed in the center comes out mostly clean with a few moist crumbs attached, about 65 to 70 minutes. Halfway through baking, cover with foil to prevent the coconut from burning.

Remove and set the loaf pan on a wire rack to cool for 15 minutes before carefully turning the loaf out to cool completely.

  1. How much fresh pineapple do you think I'd need? I have a pineapple sitting on the counter, but no canned.

  2. Alice - if I had to guess, it would probably be around 1 1/2 cups chopped fresh pineapple! Could be a little more or a little less though.

    You most certainly are a genius ! Such a wide variety of food to pick from esp. I luvd the bakes and tarts. Only one problem- could you also indicate metric measurements and I can easily siphon out 12 tbs buttter and the like but when it comes to 2/3 cup I'm totally stumped and have to scramble to any measurements indicator. Otherwise a splendid blog and look forward to more of your content.
