Honey-Roasted Chunky Peanut Butter Cookies (Adapted from LCBO)
1 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup peanut butter
8 tablespoons unsalted butter, softened
1/2 cup packed brown sugar
1/3 cup honey
1 large egg
1 teaspoon vanilla
1 cup coarsely chopped honey-roasted peanuts
Preheat oven to 350
In a medium bowl, whisk together flour, baking soda and salt.
In a large bowl, beat together peanut butter, butter, brown sugar and honey until well combined. Add egg and mix until blended, scraping down the sides if necessary. Mix in vanilla. Add the flour mixture and mix just until combined. Use a wooden spoon to stir in the chopped peanuts until evenly mixed in.
Using a tablespoon cookie scoop, portion out the dough and place on parchment lined baking sheets. Lightly flatten the balls and use a fork to make a criss cross pattern on top. Dip the fork in flour or sugar if it is sticky.
Bake until golden and the center is just set, about 10 minutes. Remove and let cookies sit for 1 minute on the baking sheet before removing to a wire rack to cool completely.
Makes about 42 cookies

these look great, joe! did you use processed peanut butter or the natural kind?
ReplyDeleteKickpleat - I used the processed kind - I much prefer natural, but find it does not work in all recipes when it does not call for it.
