Mashed Potatoes with Cumin-Lime Butter

Mashed Potatoes with Cumin-Lime Butter (Adapted from CL)

3 tablespoons minced fresh cilantro
2 tablespoons finely chopped shallots
2 tablespoons butter, softened
1 tablespoon plus 1 teaspoon fresh lime juice
1 1/2 teaspoons cumin seeds, toasted
1/2 teaspoon ground cumin
2 1/2 pounds quartered Yukon gold potatoes
3/4 cup buttermilk
3/4 teaspoon salt
1/4 teaspoon freshly ground black pepper

In a small bowl, stir together cilantro, shallots, butter, juice, cumin seeds and ground cumin. Cover and place in the refrigerator until ready to use.

In a large saucepan, add potatoes and cover with water. Bring to a boil, reduce heat and simmer until tender - about 20 minutes. Remove and drain. Add potatoes back into the pan. Add buttermilk, salt and pepper - mash with a potato masher until the desired consistency. Serve with cumin-lime butter.

Makes about 4 to 6 servings.
