One-Dish Barley, Wild Rice, and Chicken Pilaf (Adapted from CL)
1/2 cup hot water
1/4 cup dried porcini mushrooms, chopped
1 tablespoon olive oil
1 cup chopped onion
3 garlic cloves, minced
3/4 cup dry pearl barley
1/4 cup dry wild rice
2 teaspoons chopped fresh thyme
1 3/4 cups chicken broth
2 cups chopped cooked chicken breast
2 ounces fresh grated Parmesan cheese
1/4 cup chopped fresh parsley
1/4 teaspoon salt
1/4 teaspoon ground black pepper
In a small bowl, add hot water and mushrooms - let sit for 10 minutes or until the mushrooms soften.
In a large skillet, heat oil over medium. Add onion and cook for 1 minute. Stir in garlic and cook until fragrant, about 30 seconds. Stir in barley, rice and thyme - cook until lightly toasted, about 5 minutes. Mix in mushroom mixture and broth. Cover, reduce heat and simmer until the barley is tender and most of the liquid has been absorbed - about 40 minutes. Stir in chicken and cheese - continue cooking until thoroughly heated, about 5 minutes. Stir in parsley, salt, and pepper before serving.
Makes 4 servings.

I think this sounds fantastic. Also, since arborio rice is NOT South Beach friendly at all, this would be perfect for me.
