Peanut Butter Chocolate Pudding

Peanut Butter Chocolate Pudding (Adapted from Land O Lakes)

4 tablespoons unsalted butter
1/4 cup creamy peanut butter
1 1/2 ounces chopped semi-sweet chocolate
1 1/2 ounces chopped dark chocolate
pinch of salt
3 cups milk
1/4 cup granulated sugar
3 large egg yolks
3 tablespoons cornstarch

In a medium saucepan, add butter and peanut butter - heat over low, stirring, until melted and smooth. Add chocolate - continue to cook, gently stirring, until the chocolate has melted. Stir in milk - increase heat to medium and continue cooking until bubbles begin to form around the edges, about 5 minutes.

Meanwhile, in a medium bowl, whisk together sugar, egg yolks and cornstarch. Whisk in a small amount of hot milk mixture, in a slow stream, into egg mixture. Gradually add egg mixture to hot milk mixture. Cook, stirring or whisking constantly, until the mixture has thickened, about 1 to 3 minutes. Remove from the heat and divide between 8 individual bowls or ramekins. Cover and place into the refrigerator until pudding has cool completely.

  2. This was delicious! I couldn't taste the peanut butter because I added extra chocolate, but still very good. I topped it with unbaked graham cracker crust and melted marshmallows!
