Yukon Gold Potatoes Sautéed in Clarified Butter (Adapted from CL)
3 pounds Yukon gold potatoes, cut into 1 1/2" pieces
1/4 cup Clarified Butter
2 tablespoons chopped parsley
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 garlic clove, minced
In a large saucepan, add potato cubes and cover with water. Bring to a boil, reduce heat and let simmer for 2 minutes. Drain away water and let sit for 2 minutes.
In a large skillet, heat butter medium-high heat. Stir in potatoes and reduce heat to medium - cook until browned and tender - about 20 minutes. Gently mix in parsley, salt, pepper and garlic - let cook until fragrant, about 1 minute.
Makes 6-8 servings.
