1/3 cup chopped fresh basil
1 teaspoon grated lemon zest
2 tablespoons fresh lemon juice
1 tablespoon extravirgin olive oil
2 teaspoons chopped fresh oregano
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
2 garlic cloves, minced
3 ounces goat cheese
a French baguette, sliced on the diagonal and toasted
In a medium bowl, stir together basil, zest, lemon juice, oil, oregano, salt, pepper and garlic. Add goat cheese and mix until well combined. Scoop the mixture onto a piece of plastic wrap and shape into a log - twist the ends to seal. Place in the refrigerator to chill for at least 2 hours. Serve with toasted baguette slices. If you can, try and let the cheese sit out for a few minutes before serving.
Makes about 4 to 8 servings depending on how much cheese and toast you want!
