Barbecue-Rubbed Pork Chops

Barbecue-Rubbed Pork Chops (Adapted from CL)

1 tablespoon brown sugar
1 teaspoon salt
1 teaspoon paprika
1 teaspoon chili powder
3/4 teaspoon garlic powder
3/4 teaspoon ground cumin
1/4 teaspoon dry mustard
1/8 teaspoon ground allspice
1/8 teaspoon ground red pepper
4 center-cut loin pork chops, trimmed
2 teaspoons canola oil

In a small bowl, stir together brown sugar, salt, paprika, chili powder, garlic, cumin, mustard, allspice and red pepper until thoroughly combined. Evenly rub the mixture over the pork chops.

Add oil to a grill pan and heat over medium-high. Add pork and cook for about 2 minutes on each side. Reduce heat to medium and continue to cook for 4-8 minutes or until done, turning occasionally. Remove from pan and let sit for 5 minutes before serving.

  1. You put the rub on the chops before you plop them in the pan, right? Do they sit for a while after they are rubbed, or do you immediately put them in the pan? Thanks. I'm more a novice than you and while I'm at it - I read your blog every day and thoroughly enjoy it!

  2. Hi Joan! We let the rub sit on the pork for maybe 5 minutes before they went into the pan!
