Sesame Noodles with Chicken (Adapted from CL)
8 ounces dry linguine pasta
1 cup matchstick-cut carrots
2/3 cup vegetable broth
1/2 cup natural peanut butter
2 tablespoons rice vinegar
2 tablespoons soy sauce
1 tablespoon minced fresh ginger
2 teaspoons Sriracha
2 cups shredded cooked chicken breast
3/4 cup thinly sliced green onions
2 tablespoons sesame seeds, toasted
In a large pot of boiling water, cook pasta according to package directions. Add carrots to pasta during the last 3 minutes of cooking. Drain well.
In a medium bowl, whisk together broth, peanut butter, rice vinegar, soy sauce, ginger and Sriracha.
In a large bowl, toss together cooked pasta and carrots, shredded chicken and green onions. Pour the peanut butter mixture in the bowl and toss well to coat. Sprinkle with sesame seeds.
Makes about 4 servings.
