Broccoli, Asiago and Chicken Sausage Frittata

6 large eggs
4 large egg whites
1 teaspoon dried Italian seasoning
1/4 teaspoon salt
1/4 teaspoon crushed red pepper
1/8 teaspoon fresh ground black pepper
2 teaspoons olive oil
2 cups finely chopped broccoli, rinsed and drained - but you want some water clinging to it
1/3 cup thinly sliced green onions
2 garlic cloves, minced
2 chicken sausage links, diced
1 1/2 ounces fresh grated Asiago cheese
1/4 cup diced fresh tomato

Preheat oven to 350

In a large bowl, whisk together eggs, egg whites, Italian seasoning, salt, crushed red pepper and black pepper until thoroughly combined.

In a large skillet, heat oil over medium heat. Add broccoli, onion, garlic and chicken sausage - cook until the broccoli is crisp tender, about 4 minutes. Remove from the heat. Pour egg mixture into the skillet and place in the oven.

Bake until the frittata is golden and set - about 15-20 minutes. Remove and scatter the top with the cheese - place back in the oven until the cheese melts, one or two more minutes. Remove and scatter the top with the chopped tomato to serve.

Makes about 4-6 servings.
