Fruit Slaw (Adapted from CL)
For the dressing
1/3 cup mayonnaise
1/3 cup sour cream
2 teaspoons grated lime zest
2 tablespoons chopped fresh cilantro
2 tablespoons fresh lime juice
1 teaspoon sugar
1 teaspoon curry powder
3/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
For the slaw
2 cups diced pineapple
2 cups diced peeled pears
1 cup diced peeled mango
1 cup seedless red grapes, halved
16 ounces broccoli slaw
To make the dressing
In a small bowl, whisk together mayonnaise, sour cream, lime zest, cilantro, lime juice, sugar, curry, salt and pepper.
To assemble
In a large bowl, gently toss together pineapple, pears, mango, grapes and slaw. Pour in the mayonnaise mixture and toss well to thoroughly coat.
Makes about 8-10 servings
