Carrot-Pineapple Slaw

Carrot-Pineapple Slaw (Adapted from CL)

1 cup diced fresh pineapple
1/2 cup golden raisins
10 ounces matchstick-cut carrots
2 tablespoons canola oil
2 tablespoons fresh lemon juice
2 tablespoons pure maple syrup
1 tablespoon fresh pineapple juice
2 tablespoons chopped parsley
1/4 teaspoon salt
1/8 teaspoon black pepper

In a large bowl, toss together pineapple, raisins and carrots.

In a small bowl, whisk together lemon juice, syrup, and pineapple juice. Pour into the carrot mixture and toss well to coat. Mix in parsley, salt and pepper. Cover and chill until ready to serve.

Makes about 4-6 servings.
