Caramel Cashew Cookies (Adapted from BH&G)
1 1/2 cups all-purpose flour
1/2 teaspoon salt
2 1/4 cups roasted salted cashews, divided
2 tablespoons canola oil
8 tablespoons unsalted butter, softened
3/4 cup packed light-brown sugar
1/3 cup granulated sugar
1 large egg
1 teaspoon pure vanilla extract
24 cubes soft caramel candies
1/4 cup heavy cream
36 cashew halves
Preheat oven to 350 degrees.
In a medium bowl, whisk together flour and salt.
Coarsely chop 3/4 cup cashews and set aside.
Place remaining 1 1/2 cups cashews into a food processor and process until finely chopped. With the processor running, gradually pour in canola oil - process until mixture is creamy, about 2 minutes.
In a large bowl, beat together cashew butter, mixture, butter and sugars until creamy and well combined. Beat in egg and vanilla. Gradually add flour mixture and mix just until combined - stir in 3/4 cup chopped cashews.
Shape dough into 1 1/2-inch balls. Place on parchment-lined baking sheets - gently flatten each ball with a glass dipped in extra granulated sugar to keep it from sticking. Place into the oven and bake until the bottoms are just golden and the edges are firm, about 10 to 12 minutes. Remove and place on a wire rack - let cookies cool completely.
In a small saucepan, add caramels and cream - heat over low, stirring, until melted and smooth. Let cool slightly, about 10 minutes. Spoon a small amount in the center of each cookie and press a cashew half on top of the caramel.
Makes about 36 cookies.

I am so excited to get this recipe for cashew butter. At Christmas I asked my son to get me some cashews from Costco. He brought me 2.5 lb. but too late for my recipe! Now I have a way to use them. What kind of oil do you use. Will the butter keep or should I freeze or refrigerate it. I love your blog.

ReplyDeleteThough not as homemade (or probably as much fun), I would have to use store bought cashew butter since I do not have a food processor! You wouldn't have any idea about how much cashew butter the 1 1/2 cups of cashews + oil translates into, would you? Thanks :)
ReplyDeleteBetty - I didn't measure what the results were, sorry! However, 1 1/2 cups of cashews is approximately 180 grams and the oil is about 28 to 30 grams for 2 tablespoons. So, what about using 205 to 210 grams of cashew butter?
