Carrot Orzo

Carrot Orzo (Adapted from Bon Appétit)

6 ounces peeled carrots, coarsely chopped
2 tablespoons butter
1 cup dry orzo
2 1/4 cups chicken or vegetable broth
1/2 cup water
2 garlic cloves, minced
1/4 cup fresh grated Parmesan cheese
2 tablespoons chopped green onions
1 teaspoon minced fresh rosemary

Add carrots to a food processor - pulse until the carrots are finely chopped.

In a medium saucepan, melt butter over medium. Add orzo and carrots - sauté until orzo is golden, about 5 minutes. Add broth, water and garlic - bring to a high simmer, reduce heat and cook until all liquid is absorbed, stirring frequently, about 10 to 15 minutes. Stir in cheese, green onions and rosemary. Season to taste with salt and fresh ground black pepper.

Makes about 4 servings.

  2. It does look good. It reminds me of pumpkin/squash risotto. Which reminds me of some crazy italian tv chef who made pasta sauce out of canned pumpkin and hot sausage.

    But anyway, it looks delish.

  4. I made this dish as a side w/ broiled salmon and broccoli. My boyfriend was extremely skeptical, as were a couple of my friends today... Carrots w/ orzo?? You're crazy!! But I had a good feeling about this recipe and boy did it hit the mark. The rosemary perfectly complements the flavors of this dish and the carrot is the perfect texture. I used romano because it's what we had in the house, and as a result hardly had to add any salt at the end. Thank you! It was such an easy and fast, and oh so good dish.

    I made this last week as a side dish for some roasted chicken and really enjoyed it. Not only is it a sneaky way to get my husband to have a few veggies in his meal, but it was a bright and colorful dish. I'll undoubtedly make this again sometime.
