Cashew Burgers

Cashew Burgers (Adapted from How To Cook Everything Vegetarian)

1 medium onion, peeled and coarsely chopped
1 cup cashews
1 cup old-fashion rolled oats
2 tablespoons tahini
1 1/4 teaspoons chili powder
salt and fresh ground black pepper
1 large egg
1 1/2 tablespoons canola oil

In a food processor, add onion and process until finely ground. Add cashews and oat - pulse to coarsely chop. Add tahini and chili powder - season with salt and fresh ground black pepper. Add egg and pulse mixture just until incorporated - you don't want the ingredients too finely chopped. If the mixture seems dry, mix in a little stock or water - it should be moist, but not loose.

Evenly divide the mixture into 4 portions and shape each into patty. Cover and let rest in the refrigerator for about 30 minutes to let the oats absorb some of the moisture.

When ready, heat oil in a large skillet over medium. Add patties into the skillet and cook, undisturbed, until the bottom is golden, about 3 to 5 minutes. Gently flip patties, lower the heat and continue to cook until the other side is golden, about 3 minutes.

Remove from the heat and serve as is or as you would a burger with a bun and your favorite toppings.

Makes 4 burgers.
