Turkey Con Queso Bake (Adapted from Canadian Living)
For the sauce
3 tablespoons butter
3/4 cup chopped onion
2 garlic cloves, minced
1/4 cup all-purpose flour
1 1/2 cups chicken broth
1 cup milk
12 ounces (about 3 cups) shredded sharp white Cheddar cheese
1/2 teaspoon fresh ground black pepper
1/2 teaspoon salt
For the filling
2 cups diced cooked turkey
2 tomatoes, seeded and diced
1/4 cup chopped green olives
3 green onions, thinly sliced
2 tablespoons chopped fresh cilantro
1 jalapeño pepper, seeded and chopped
8 - 7" flour tortillas
Preheat oven to 350 degrees.
To prepare the sauce
In a medium saucepan, add butter and melt over medium. Add onion - cook until softened, about 4 minutes - add garlic and cook until fragrant, about 1 minute. Add flour - cook, stirring, for 2 minutes. Gradually whisk in broth and milk - bring mixture to a boil, reduce heat and simmer until thickened, about 3 to 5 minutes. Remove from the heat and gradually stir in 10 ounces (about 2-1/2 cups) cheese, salt and pepper.
To prepare the filling
In large bowl, toss together turkey, tomatoes, olives, onions, cilantro and jalapeño - stir in 1/2 cup of the cheese sauce. Scoop about 3/4 cup of the mixture into a 9" x 13" baking dish coated with cooking spray.
Evenly divided remaining filling between the center of each tortilla - loosely roll up and place seam side down, onto the sauce. Spoon remaining sauce over top. Sprinkle with remaining cheese.
Place into the oven and bake until golden on top and the sauce us bubbling, about 30 to 40 minutes. Remove and let stand 15 minutes before serving.
