Mini Spinach and Cheese Pizzas (Adapted from Everyday Food)
4 mini 3" whole-wheat pitas, split
1/2 cup ricotta cheese
1/2 teaspoon dried oregano
1 garlic clove, minced
1/4 teaspoon crushed red pepper
salt and fresh ground black pepper
10 ounces frozen chopped spinach, thawed and squeezed dry
about 8 ounces of small mozzarella balls
Preheat broiler
On a large baking sheet lined with foil, arrange pita halves on top, cut side up.
In a small bowl, stir together ricotta, oregano, garlic and crushed red pepper - season to taste with salt and pepper.
Evenly divide the ricotta mixture between the pitas and spread to cover. Top each with a bit of the spinach and evenly divide the mozzarella balls on top. Season again with salt and pepper.
Place the baking sheet under the boiler and cook until cheese is melted and starts to brown, about 2 to 4 minutes, rotating sheet halfway through baking.
Makes 2 to 4 servings.

They are so cute - what a great idea. They would be great to hand around at dinner parties as nibbles with drinks.
