Potato Chips with Blue Cheese Dip

Potato Chips with Blue Cheese Dip (Adapted from CL)

1/3 cup sour cream
1 1/2 ounces finely crumbled blue cheese
2 tablespoons mayonnaise
2 tablespoons milk
1/4 teaspoon Worcestershire sauce
1 pound russet potatoes, thinly sliced
coarse salt

Preheat oven to 400

In a small bowl, stir together sour cream, blue cheese, mayonnaise, milk and Worcestershire sauce until well combined.

Place a baking sheet in the oven to heat up for about 5 minutes.

Pat the slices of potatoes well with paper towels to remove excess moisture. Spray the hot baking sheet with olive oil spray and carefully arrange half of the potato slices in a single layer. Sprinkle with coarse salt. Place in the oven and bake for 10 minutes - carefully turn potato slices over and continue baking until golden, about 5 to 10 more minutes. Repeat process with remaining potatoes. Serve with blue cheese dip.
