Roasted Red Pepper, Chicken Sausage and Smoked Mozarella Potato-Crust Pizza (Adapted from Canadian Living)
2 pounds russet potatoes
2 tablepsoons olive oil
1 teaspoon dried oregano
1/2 teaspoon crushed red pepper
1/4 teaspoon fresh ground black pepper
1/4 teaspoon salt
3/4 cup marinara sauce
3 ounces smoked mozzarella
3 ounces fully-cooked chicken sausage, diced and browned in a skillet
1/2 cup chopped roasted red peppers
1 ounce fresh grated Parmesan cheese
Preheat oven to 450 with a rack on the bottom.
In large saucepan of boiling salted water, cook potatoes for 10 minutes. Drain and let cool - shred potatoes into a large bowl with a coarse grater. Add in oil, oregano, crushed red pepper, black pepper and salt. Toss well to combine.
Scatter mixture all over a 12" round pizza pan lightly coated with nonstick spray - firmly press potatoes to an even layer. Bake in bottom of the oven until tender and golden brown - about 25-30 minutes.
Remove and spread the crust with marinara sauce. Scatter the top with the smoked mozzarella, browned chicken sausage and chopped peppers. Sprinkle with Parmesan cheese over the top. Place back in the oven and bake until the cheeses melt - about 5 to 10 minutes. Remove and let cool a couple minutes before serving.
Makes about 4 large servings.
