Barbecued Pork Sandwiches

Barbecued Pork Sandwiches (Adapted from Eating Well)

1 small yellow onion, cut into 1/2-inch-thick rounds
2 teaspoons canola oil
2 whole-wheat buns, split horizontally
One half (about 6 ounces) grilled Chipotle-Marinated Pork Tenderloin, thinly sliced
1/3 cup barbecue sauce
Franks Red Hot to taste if desired

Heat a grill pan over high heat. Brush onion with olive oil and grill until lightly browned and soft, turning once, 4 to 5 minutes. Remove and cool.

Chop the onion and move to a bowl. Using two forks, shred the pork and add it to the bowl with the onions. Add in the barbecue sauce and hot sauce (if wanted) - mix together thoroughly. Spoon into the buns and enjoy!

Makes 2 sandwiches
