Sweet and Salty Peanut Chocolate Chunk Cookies

Sweet and Salty Peanut Chocolate Chunk Cookies (Adapted from CL)

1 cup all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon baking soda
4 tablespoons unsalted butter, softened
1/2 cup granulated sugar
1/2 cup packed brown sugar
1 large egg
1 teaspoon vanilla extract
1/3 cup coarsely chopped dry-roasted and unsalted peanuts, toasted and cooled
1/3 cup bittersweet chocolate chunks
1/2 teaspoon coarse sea salt

Preheat oven to 350

In a medium bowl, whisk together flour, baking powder and baking soda.

In a large bowl, beat together butter and sugar until well combined. Beat in egg and vanilla. Add dry ingredients and mix just until combined. Fold in peanuts, chocolate chips and salt.

Scoop dough using a tablespoon cookie scoop onto parchment lined baking sheets. Bake until edges are beginning to turn a light golden, about 9-11 minutes. Remove and place baking sheet on a wire rack to cool for 5 minutes. Remove cookies and place back on wire rack to finish cooling.

Makes about 24 cookies.
