We are having one of the many leftovers in the freezer for dinner tonight, but I did put together a side dish of Waldorf Slaw in the living room that required little effort. While it should have taken me just a few minutes to throw together, it seemed to take forever since nothing was in its place! I did end up using the last of our Gingergolds so I must make a mental note to put them on the list to get from Costco... we love these apples! The apples are tossed with chopped pears, plump golden raisins, rich toasted walnuts and broccoli slaw. A creamy dressing made with buttermilk, sour cream, plain yogurt, fresh lemon zest, lemon juice and some seasonings cling to the crunchy salad. I thought the dressing was kind of runny while mixing it, but after a chill in the refrigerator, it seemed to really hold together well. Tangy, fresh and with a satisfying crunch - this dish gave us enough for lunch tomorrow and helped to keep a hum-drum leftover dinner a little more interesting!
