Stir-Fried Turkey in Lettuce Wraps (Adapted from Everyday Food)
1/4 cup soy sauce
1 tablespoon plus 1 teaspoon fish sauce
1 tablespoon plus 1 teaspoon granulated sugar
2 teaspoons toasted sesame oil
1 teaspoon canola oil
1 large shallot, minced
2 tablespoons minced fresh ginger
2 garlic cloves, minced
1 small serrano chile, finely chopped (and seeded, if desired)
16 ounces (1 pound) ground turkey
Bibb or Boston lettuce leaves, for serving
In a small bowl, whisk together soy sauce, fish sauce and sugar until well combined.
Heat a large skillet over medium-high until hot. Drizzle oils into the skillet and stir in shallot, ginger, garlic and serrano - stir and cook until fragrant, about 30 seconds. Add turkey and cook, stirring to crumble, until almost cooked through, about 4 to 5 minutes. Pour half of the soy sauce mixture into the skillet and cook, stirring, until the turkey is completely cooked through, about 2 more minutes.
Serve in lettuce leaves with remaining soy sauce mixture drizzled over the top.
Makes about 3 to 4 servings.
