Apple, Grape and Celery Salad (Adapted from Everyday Food)
2 celery stalks, thinly sliced on the diagonal
1 Granny Smith apple, cored, halved and thinly sliced
1 cup seedless red grapes, halved
1 tablespoon white-wine vinegar
1 tablespoon extra-virgin olive oil
salt and fresh ground black pepper
1/4 cup coarsely chopped pecans, toasted
In a large bowl, combine celery, apple, grapes, vinegar and oil. Season to taste with salt and pepper - toss well to combine. Divide the mixture between 4 plates and scatter the top of each with a tablespoon of the toasted pecans. Add a few celery leaves on top if desired.
Makes 4 servings.
