Banana-Oat Pancakes

Banana-Oat Pancakes

1 all-purpose flour
1 cup old-fashioned rolled oats
1/2 cup whole-wheat pastry flour
1/4 cup packed brown sugar
1 teaspoon baking powder
3/4 teaspoon cinnamon
1/2 teaspoon baking soda
1/4 teaspoon salt
3/4 cup milk
3/4 cup nonfat vanilla yogurt
2 eggs, lightly beaten
3/4 cup mashed ripe banana
3 tablespoons melted butter
2 teaspoons vanilla

In a large bowl, whisk together all-purpose flour, oats, whole-wheat pastry flour, sugar, baking powder, cinnamon, baking soda and salt.

In a medium bowl, whisk together milk, eggs, bananas, butter and vanilla. Pour mixture over the dry ingredients and stir just until combined. Let it for 10 minutes.

Heat a griddle over medium heat and lightly coat with nonstick spray. Scoop about 1/4 cup of batter, per pancake, onto the griddle and cook until bubbles form on the top - flip pancakes and continue to cook until golden. Repeat with remaining batter until it is all used up.

Makes about 4 to 6 servings.
