Browned Butter Oatmeal-Cranberry Bars

Browned Butter Oatmeal-Cranberry Bars (Adapted from Everyday Food)

12 tablespoons unsalted butter
2 cups old-fashioned rolled oats
1 cup all-purpose flour
1/2 teaspoon cinnamon
1/2 teaspoon salt
1 cup dried cranberries
3/4 cup packed light-brown sugar
1/4 cup granulated sugar
1 large egg

Preheat oven to 350 degrees.

In a small saucepan, melt butter over medium - continue to cook, stirring constantly, until the butter releases a nutty aroma and just starts to turn golden, about 5 to 8 minutes. Remove and set aside to cool briefly.

In a medium bowl, whisk together oats, flour, cinnamon, salt and cranberries.

In a large bowl, whisk together browned butter, sugars and egg until well combined. Add dry ingredients and mix just until combined.

Scoop the batter into an 8" square baking pan coated with nonstick spray - spread to an even layer. Place into the oven and bake until a toothpick inserted in the center comes out mostly clean with a few moist crumbs attached, about 22 to 30 minutes. Remove from the oven and let cool before turning out and cutting into bars.

Makes about 12 to 16 bars.
