Chocolate-Cherry Chip Oatmeal Cookies
1 1/2 cups old-fashion rolled oats
1 cup all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
5 tablespoons unsalted butter, softened
5 tablespoons spectrum organic shortening
1 cup packed light brown sugar
1 large egg
1 1/2 teaspoons vanilla
1/2 cup chopped bittersweet chocolate
1/2 cup cherry flavored baking chips
Preheat oven to 375
In a medium bowl, whisk together oats, flour, baking powder, baking soda and salt.
In a large mixing bowl, cream together butter, shortening and sugar until light and fluffy. Add egg and beat until combined - mix in vanilla. Add dry ingredients and mix just until combined. Using a wooden spatula, fold in chopped chocolate and cherry chips.
Portion the dough out using a tablespoon cookie scoop onto parchment lined baking sheets. Bake until the edges of the cookies are golden, about 12 minutes. Remove and let sit on the baking sheet for about 2 minutes. Move the cookies to a wire rack to cool completely.
Makes about 32 cookies.
